There is often a lot of confusion about what Sabatier Knives are.  Sabatier knives are actually a brand name of a type of kitchen or culinary knife.   High quality Sabatier knives are often considered the knives made in the Thiers region of France.  Sabatier knives made in the Thiers regions are often said to go through a full forged process, making them the best quality. 

Sabatier knives should be made out of one of two materials, stainless steel, or high-carbon steel.  The high-carbon steel is easier to sharpen than the stainless steel.  The handle of the knife is almost always made from a black nylon material for a good grip and durability reasons.  There are some more expensive looking handles, but they are not common.

Sabatier Knife Controversies

Where the controversy about Sabatier knives arises from is the fact that eight different companies are legally permitted to manufacture and use the Sabatier knife name.  This causes great controversy over the quality, name, authenticity, and originality of the Sabatier knives.  This also can make it very difficult for the consumer to make an educated decision on what they are purchasing. 

Because of all of these companies being able to produce knives under the Sabatier brand name, professional chefs usually only consider real Sabatier knives as knives made in Thiers, France from well established manufacturers from the 19th century.

Often you will get mass manufactured Sabatier knives from other companies.  Try and avoid this type of Sabatier knives, because they are normally mass produced knives from China and other countries.  Beware because these knives are normally made from lower quality materials, and they do not use the same forging process as Sabatier Knives made in the Thiers, France region.

Tips on Buying Sabatier Knife Sets

With so much confusion over the knives, and the quality of the knives, there are some certain tips you should know about when buying.  First of all, remember you are going to get what you pay for.  Cheap knives are normally exactly that, cheap.  Higher quality Sabatier knives are going to be more expensive.

Secondly, never buy a set of knives that just has Sabatier on them.  To avoid the conflict between who could use the Sabatier brand name, many companies were allowed to use it.  They are also required to put their own company name or symbol on before or after Sabatier.  So if a set of knives just has Sabatier on it and nothing else, it is a cheap forgery set. 

There are many great companies that do sell these knives.  Here is a list of some of the better ones, Judge Sabatier, K-Sabatier, and Thiers-Issard Four-Star Elephant Sabatier.  There are other companies that make great knives, so investigating which company is putting their name on the knife with the Sabatier label is going to be very important when trying to find the best knife.
